Nitrile vs Vinyl vs Latex Gloves for Businesses: Cost Per Pair vs Cost Per Task
The short answer: for most South Florida businesses buying disposable gloves by the case, nitrile is the default, vinyl is the right choice only for short, dry, low-risk tasks, and latex is a liability you take on deliberately or not at all. The price per pair says vinyl wins; the price per task — which is how gloves are actually consumed under the Food Code and OSHA — usually says otherwise. Here is what the rules require, what the spec sheets say, and the math.
What the rules actually say about which glove
Less than people assume, and more precisely than most vendor pages report.
- FDA banned powdered patient-examination gloves effective January 18, 2017 (21 CFR 895.103). Powder-free is not a premium feature; it is the only legal exam glove. FDA also sets the minimum acceptable quality for exam gloves at AQL 2.5 for water-leak and visual defects (21 CFR 800.20), and 1.5 for surgical gloves.
- OSHA requires employers to select hand protection based on the task, the conditions and the duration of use (29 CFR 1910.138), and under the bloodborne-pathogens standard gloves must be replaced as soon as practical when contaminated or torn, must not be washed for reuse, and hypoallergenic alternatives must be readily accessible for latex-sensitive employees (1910.1030(d)(3)(iii) and (ix)).
- NIOSH advises using non-latex gloves for activities not likely to involve contact with infectious materials, and states plainly that so-called hypoallergenic latex gloves do not reduce the risk of latex allergy. FDA, for its part, prohibits the word “hypoallergenic” on glove labels (21 CFR 801.437).
- FDA Food Code (2022) prohibits bare-hand contact with exposed ready-to-eat food (3-301.11) and requires that single-use gloves be used for only one task, then discarded when damaged, soiled or when the task is interrupted (3-304.15). The Code does not mandate gloves — tongs, deli tissue and utensils are listed alternatives — but once a kitchen chooses gloves, the one-task rule is what drives consumption.
Two practical consequences. First, in a kitchen, gloves are consumed per task, not per shift, so a cheaper glove that fails mid-task is not cheaper. Second, if anyone on staff is latex-sensitive, OSHA obliges you to stock an alternative anyway, which is why most businesses simply stop buying latex.

Three things to take from the table. A reputable manufacturer inspects to AQL 1.5, stricter than FDA’s 2.5 floor, so “FDA compliant” on a box tells you the minimum, not the quality. Economy nitrile at 3.5 mil in the palm sits close to vinyl on thickness while keeping nitrile’s chemical resistance, which is where the real price competition happens. And latex at 5.5 mil is thick and tactile, which is exactly why it persists in dental and tattoo work despite the allergy problem.
One claim you will read everywhere and will not find on a manufacturer or government page: that vinyl has a specific, quantified puncture-resistance deficit versus nitrile. What is documented is narrower: a NIOSH-funded study found the vinyl glove it tested did not provide adequate chemical resistance to ethyl alcohol where nitrile and latex did. Cost per pair versus cost per task
Illustrative case pricing — substitute your own quote: vinyl at 4 cents a glove, economy nitrile at 6, standard nitrile at 8, latex at 6. Per pair that is 8, 12, 16 and 12 cents, and vinyl wins by a mile.
Now count tasks. A line cook changing gloves every time the task changes, per the Food Code, might go through 25 pairs a shift. If vinyl tears or loses its fit on one task in ten — a conservative figure for a thin PVC glove in a wet, hot kitchen — that is 2.5 extra changes plus the handwash each one requires. At 8 cents a pair plus a minute of a $15-an-hour cook’s time per extra change, the vinyl shift costs about $2.83; the economy nitrile shift, assuming one failure in twenty-five, costs about $3.37; standard nitrile with effectively no failures costs $4.00. Vinyl is still cheapest on this arithmetic — but the gap between vinyl and economy nitrile has shrunk from 50% to about 20%, and it closes entirely the moment the task involves sanitizer, grease or anything the vinyl glove lets through.
